The Norcold N260 series of fridge a manual control type of refrigerators. This means that one has to hold a button down and ignite the gas flame. The N260 is a 2.4 cubic foot fridge that comes in both 2-Way and 3-Way versions, the dot 3 (.3) at the end of the model number designates the 3-Way version.
The N260 control panel is behind the fridge, where:
(1) is the temperature selector.
(2) is the mode select.
(3) is the LP Gas igniter push button.
(4) is the igniter.
This is the N260 wiring diagram, where:
(3) thermocouple interrupter.
(9) mode selector switch.
(8) LP Gas safety valve that has the thermocouple interrupter (3) attached to it .

Referencing the Norcold N260 Mode Selector Switch image above, the part (3) thermocouple interrupt adaptor is wired to the Norcold N260 Mode Selector Switch terminals identified as 'W2' & 'W3' via an orange wire. We have found that a lot of wiring diagrams have the wrong color codes, so your wire color may be different. The fridge we did the install on has a red and blue wire like seen in this image.
This red wire (or orange if color code is correct) will be spliced.. Two female spade connectors will be used to connect the Fridge Defend Relay at terminals 30 and 87, the normally open terminals of the relay as seen in the figure.
